Method
-
Step 1 of 5
Season the chicken breasts with salt and pepper, then place a thin slice of the herb butter in the centre of each and roll tightly, securing with toothpicks.
-
Step 2 of 5
Place the flour, beaten eggs and seasoned breadcrumbs (mixed with paprika) in separate shallow dishes; dredge each roll in flour, dip in egg, then coat thoroughly with breadcrumbs.
-
Step 3 of 5
Heat a pan over medium‑high heat, add enough oil to come half‑way up the sides of the chicken, and fry each roll for 3–4 minutes per side until golden.
-
Step 4 of 5
Transfer the browned rolls to a baking tray and finish in a 200°C / 400°F (180°C fan) oven for 12‑15 minutes, until the chicken is cooked through and the butter is bubbling.
-
Step 5 of 5
Rest for 2 minutes, remove toothpicks, slice and serve with a simple green salad or boiled potatoes.
Notes from the kitchen
If you cannot find fresh dill, substitute with a teaspoon of dried dill. Chill the butter mixture before stuffing to keep it solid during cooking.
