Method
-
Step 1 of 5
Pre‑heat the oven to 200°C / 400°F (180°C fan) and place the soaked cedar plank on a baking tray.
-
Step 2 of 5
Pat the salmon dry, rub each fillet with olive oil, then season with salt and pepper on both sides.
-
Step 3 of 5
Combine maple syrup, Dijon, soy sauce and half the dill in a bowl; brush the mixture over the flesh side of the salmon.
-
Step 4 of 5
Arrange the fillets skin‑side down on the plank, brush with remaining glaze and bake for 12‑15 minutes, until the flesh flakes easily and the glaze is caramelised; the plank will emit a gentle smoky aroma.
-
Step 5 of 5
Remove from the oven, sprinkle with the remaining fresh dill and serve immediately with lemon wedges.
Notes from the kitchen
If cedar planks are unavailable, use a metal baking sheet lined with parchment; the smoky note will be milder but the glaze remains the same. Leftovers keep 2 days refrigerated, reheated gently to avoid drying out.
