  1. Step 1 of 5

Dissolve the yeast and a pinch of sugar in the warm water and let stand for 5 minutes until frothy.

  2. Step 2 of 5

In a bowl combine flour, remaining sugar, salt and oil, then pour in the yeast mixture and stir to a smooth, thick batter; cover and let rise in a warm spot for 30 minutes.

  3. Step 3 of 5

Heat oil in a deep pan to 180°C (350°F); the oil should sizzle gently when a drop of batter is dropped in.

  4. Step 4 of 5

Drop spoonfuls of batter into the oil, frying a few at a time; turn them with a slotted spoon after 1 minute until both sides are golden brown, about 2‑3 minutes total.

  5. Step 5 of 5

Remove the puff‑puffs with a slotted spoon, drain on kitchen paper and serve warm.

Notes from the kitchen

If fresh yeast is unavailable, substitute with 1 g (¼ tsp) instant dry yeast; let the batter rest longer to develop fluffiness. Store in an airtight container for up to 2 days and re‑heat briefly before serving.
