Method

Step 1 of 5
Mix flour, salt, sugar and yeast in a large bowl. Make a well, pour in warm water and oil, then stir until a shaggy dough forms.
-
Step 2 of 5
Turn the dough onto a lightly floured surface and knead 5–7 minutes until smooth and elastic. Place in a greased bowl, cover with a clean cloth and let rise in a warm spot for 1 hour, or until doubled in size.
-
Step 3 of 5
Punch down the risen dough and divide it into eight equal pieces. Shape each piece into a smooth ball and let rest, covered, for 10 minutes.
-
Step 4 of 5
Heat oil in a deep, heavy‑bottomed pan to 180°C (350°F). Carefully drop one dough ball at a time; fry 4–5 minutes per side until puffed and golden, turning once.
-
Step 5 of 5
Remove the vetkoek with a slotted spoon, drain on paper towels and keep warm. Serve split open with butter and jam, or with spicy minced beef for a savoury twist.
Notes from the kitchen
If instant yeast is unavailable, use 15 g fresh yeast dissolved in the warm water. Vetkoek are best eaten the same day; reheated gently in a skillet, they regain their crispness.
