Method

Boil the potatoes in salted water until fork‑tender, about 12 minutes, then drain and return to the pot.

Mash the potatoes with butter, milk, salt and pepper until smooth and slightly fluffy.

Meanwhile, melt butter in a large pan over medium heat, add the spring onions and sauté for 2 minutes until softened.

Add the kale, a splash of water, and a pinch of salt; cover and steam for 5‑6 minutes until wilted but still bright green.

Stir the cooked kale into the mashed potatoes, fold gently, and finish with a light sprinkle of nutmeg if using.

Transfer to a warmed serving bowl, dot with a few extra pats of butter and serve immediately.
Notes from the kitchen
If kale is unavailable, use finely shredded Savoy cabbage as a traditional alternative. Leftovers reheat gently on the stove with a splash of milk to restore creaminess.
