  1. Step 1 of 8

Heat the oil in a deep saucepan over medium heat and sauté the onion until translucent, about 3 minutes.

  2. Step 2 of 8

Add the garlic, thyme, smoked paprika, curry powder and white pepper; stir for 30 seconds until fragrant.

  3. Step 3 of 8

Stir in the red and green peppers and cook for another 2 minutes, allowing them to soften.

  4. Step 4 of 8

Mix in the tomato paste and chopped tomatoes, cooking for 4 minutes until the mixture deepens in colour.

  5. Step 5 of 8

Add the rice, stirring to coat each grain with the sauce, then pour in the broth and bring to a gentle boil.

  6. Step 6 of 8

Reduce heat to low, cover the pan and simmer for 18‑20 minutes, or until the rice is tender and the liquid absorbed.

  7. Step 7 of 8

If using chicken, fold the pieces into the rice during the last 5 minutes to heat through.

  8. Step 8 of 8

Remove from heat and let the pot sit, covered, for 5 minutes; fluff with a fork before serving.

Notes from the kitchen

If fresh tomatoes are preferred, blend 4 medium tomatoes with a pinch of salt and use in place of canned. Leftovers keep well refrigerated for up to 3 days.
