  1. Step 1 of 7

Mix flour, baking powder and salt in a bowl; whisk in butter, milk, egg and vanilla to a smooth batter.

  2. Step 2 of 7

Cover and let rest for 10 minutes, then turn onto a lightly floured surface and roll to about 5 mm thickness.

  3. Step 3 of 7

Cut the dough into strips 2 cm wide, braid each strip three strands together and seal the ends by pinching.

  4. Step 4 of 7

Heat oil in a deep pan to 180°C (350°F) and fry the braids until golden, about 3‑4 minutes per side; drain on paper towels.

  5. Step 5 of 7

Meanwhile, combine sugar, water, cinnamon, ginger, cardamom and lemon zest in a saucepan; bring to a boil then simmer 5 minutes until slightly thickened.

  6. Step 6 of 7

While the braids are still warm, immerse them in the hot syrup for 1‑2 minutes, then transfer to a serving plate to glaze.

  7. Step 7 of 7

Serve the koeksisters slightly warm or at room temperature, dusted with a pinch of powdered sugar if desired.

Notes from the kitchen

If mahlab (a traditional spice) is unavailable, increase the cardamom slightly. Store in an airtight container; they soften as they absorb syrup, becoming chewier over 2‑3 days.
