Method
-
Step 1 of 5
Mix flour, yeast, sugar and salt in a bowl, then gradually add warm water and 2 tbsp olive oil, kneading until smooth and elastic; let rest covered for 10 minutes.
-
Step 2 of 5
Divide the dough into four equal balls, flatten each on a lightly floured surface to a 12‑cm (5‑in) round.
-
Step 3 of 5
Spread half a tablespoon of olive oil over each round, then sprinkle 1 tbsp za'atar evenly, pressing gently into the surface.
-
Step 4 of 5
Transfer the topped rounds onto a baking sheet lined with parchment; bake in a pre‑heated oven at 200°C / 400°F (180°C fan) for 8‑10 minutes until the edges are golden and the topping is fragrant.
-
Step 5 of 5
Remove, brush lightly with a little more olive oil and serve warm, cut into wedges.
Notes from the kitchen
If za'atar is unavailable, mix dried thyme, sumac, sesame seeds and a pinch of salt as a substitute; store leftovers in an airtight container for up to two days, reheating briefly in a toaster oven.
